Dave's Veggie Soup Recipe

Makes 6 servings


easy to make, high in fibre, no salt, no sugar, no starch. great for diets.

Ingredients
40 ounces diced tomatoes
1 cup frozen corn
1/2 cup frozen okra
2 medium carrots
2 medium onions
1 tablespoon oil
Directions
  1. Open the 2 cans of tomatoes. Add to crock pot.

  2. Add frozen corn.

  3. Cut ends of okra and slice while frozen. Add.

  4. Peel carrots, and slice fine. Add.

  5. Put lid on crock pot and turn on high.

  6. Add oil to a frying pan and heat to medium high.

  7. Peel and slice onions.

  8. Brown onions.

  9. Add 1/4 cup water and turn heat down to simmer for 5 minutes.

  10. Add onion mix to crock pot.

  11. Stir crock pot every 10-20 minutes.

  12. Cook until carrots are soft - 2-3 hours minimum.

  13. Add spices to taste - garlic, and pepper are good.
