| 40 | ounces diced tomatoes |
| 1 | cup frozen corn |
| 1/2 | cup frozen okra |
| 2 | medium carrots |
| 2 | medium onions |
| 1 | tablespoon oil |
- Open the 2 cans of tomatoes. Add to crock pot.
- Add frozen corn.
- Cut ends of okra and slice while frozen. Add.
- Peel carrots, and slice fine. Add.
- Put lid on crock pot and turn on high.
- Add oil to a frying pan and heat to medium high.
- Peel and slice onions.
- Brown onions.
- Add 1/4 cup water and turn heat down to simmer for 5 minutes.
- Add onion mix to crock pot.
- Stir crock pot every 10-20 minutes.
- Cook until carrots are soft - 2-3 hours minimum.
- Add spices to taste - garlic, and pepper are good.
