carrot and cilantro soup
| 4 | carrots, diced |
| 1/2 | cup onion, chopped |
| 2 | tbsp. olive oil |
| 1 | potato, diced |
| 1/2 | cup cilantro |
| 4 | cups water or stock |
| 1 | salt and pepper to taste |
saute onion in oil. add carrots and potato. add water or stock. add salt and pepper to taste. simmer until potato and carrots are tender. just before serving, add cilantro.Categories
