Carrot and Cilantro Soup Recipe

carrot and cilantro soup

Ingredients
4 carrots, diced
1/2 cup onion, chopped
2 tbsp. olive oil
1 potato, diced
1/2 cup cilantro
4 cups water or stock
1 salt and pepper to taste
Directions
saute onion in oil. add carrots and potato. add water or stock. add salt and pepper to taste. simmer until potato and carrots are tender. just before serving, add cilantro.
