Recipe from Mama.. said was really good
| 1 | yellow squash, sliced |
| 1 | zucchini, sliced |
| 2 | tomatoes, sliced |
| 1 | onion, sliced |
| 1 | cup uncooked rice |
| 1/4 | cup brown sugar |
| 1/3 | cup butter, melted |
| 1 | salt |
| 1 | pepper |
- Sprinkle rice on the bottom of a buttered 2 quart casserole.
- Layer vegetables on top of rice, sprinkling with brown sugar, salt, pepper and melted butter.
- Cover and cook in the microwave oven about 10 minutes, rotating casserole once (check before done as microwave ovens differ).
- If using conventional oven, add 3 tablespoons of water and bake at 325 degrees for about 45 minutes.
- NOTE: for Rice, use instant or minute rice
