Greek Breakfast Pocket Recipe

Ingredients
3/4 c egg whites
15 g olives, green, chopped
1 roma tomatoe
1 leaf romaine lettuce
1 pita pocket, whole wheat
1 1/2 t olive oil
Directions
  1. Cook eggs: Microwave on high for 1 ? to 2 minutes, until eggs are almost set. Remove from microwave and cover with plastic wrap; set aside.

  2. Fill pita with lettuce, olives and tomatoes.

  3. Cut cooked eggs into slices and add to pita.

  4. Drizzle sandwich with oil. Add salt and pepper as desired.
