Grilled Vegetable Bruschetta Recipe

This is a wonderful, tasty snack or starter, one of my favourite foods. Try red in place of yellow pepper and other types of fresh bread: Italian country bread, French bread or granary or granary bread

Ingredients
2 tbsp olive oil
2 yellow peppers, seeded and sliced into strips
1 eggplant or 2 courgettes, sliced diagonally
2 red onions, thinly sliced
3 tomatoes, thickly sliced
100 g (4 slices) bread wholegrain
2 garlic cloves, halved
40 g Parmesan cheese, shavings
5 g fresh basil leaves, to garnish
Directions
  1. Pour the olive oil over the vegetables and toss lightly to coat throughout.

  2. Place half the vegetables in a single layer on a rack in the grill pan. Cook under a hot grill until slightly softened and lightly browned (approx. 20 minutes), turning once or twice.

  3. Transfer to a plate and keep warm in a low oven. Repeat with the remaining vegetables.

  4. Toast the bread until golden on both sides and lightly rub half a garlic clove over each slice.

  5. Pile the grilled vegetables on to the slices of toast. Garnish with Parmesan shavings and basil.
