Corn & Black Bean Add-in For Campbell's Select Gold Label Southwestern Corn Soup Recipe

I wanted to make the soup more filling and nutritous, so I added vegetables and black beans.

Ingredients
1 tbsp olive oil
54 grams onion, red
2 tsp garlic, chopped
30 grams celery
89 grams corn
40 grams red pepper, finely chipped
260 grams black beans
Directions
  1. Saute onion, garlic, and celery over medium heat.

  2. Once slightly browned, add in corn and red pepper. Stir only occasionally, so vegetables have time to get some color. About 5 minutes.

  3. Add soup.

  4. Once warmed through, add black beans. You'll want to do this last so they don't break down.

  5. Enjoy!
