Black Bean Tortilla Bake Recipe

Made this tonight and on a scale of 1-10, I'd give it a 5.

Ingredients
1 clove garlic
1/2 cup onion, diced
1 cup tomato, diced
1/2 cup green onion, sliced
1/2 tsp chili powder
8 oz tomato sauce
16 oz black beans, rinsed and drained
1 tsp cilantro
222 g (12) soft corn tortillas
8 oz cheddar cheese, low-fat shredded
Directions
  1. Preheat oven to 350*F

  2. Spray large skilet with cooking spray.

  3. Add garlic, onions, tomato, green onion, cumin, and chili powder to skillet.

  4. Cook on medium heat until onion is tender.

  5. Add tomato sauce and cook 5 minutes more.

  6. Stir in bean, cilantro, salt and pepper to taste.

  7. Spray 8" square baking dish with cooking spray.

  8. Layer tortillas, 1/3 cheese, and 1/3 bean mixture.

  9. Repeat 2 more times.

  10. Top with extra cheese.

  11. Bake 20minutes covered

  12. Then uncover and bake additional 10 minutes - till bubbly.
