Ingredients

avocado |
| 1 1/2 |
cups beans, canned |
| 2 |
tbsp lemon juice |
| 3 |
medium tomatoes |
| 1 |
tsp cumin, ground |
| 2 |
tbsp olive oil |
| 3 |
green onions |
| 1 |
cup cilantro |
| 1 |
cups cheese, grated |
| 1 |
salt and pepper to taste |
| 4 |
flour tortillas |
Directions
- Peel and cube the avocado; dice the tomatoe; mix the first nine ingredients together.
- Working on one or two at a time, sprinkle a tortilla with grated cheese and place them breifly in the oven until the cheese it melted.
- Spoon the filling onto the tortilla, roll up and enjoy!
