Aunt Darlena's Cheese Burritos

Makes 4 servings

Very Fresh and Healthy

Ingredients
1 avocado
1 1/2 cups beans, canned
2 tbsp lemon juice
3 medium tomatoes
1 tsp cumin, ground
2 tbsp olive oil
3 green onions
1 cup cilantro
1 cups cheese, grated
1 salt and pepper to taste
4 flour tortillas
Directions
  1. Peel and cube the avocado; dice the tomatoe; mix the first nine ingredients together.

  2. Working on one or two at a time, sprinkle a tortilla with grated cheese and place them breifly in the oven until the cheese it melted.

  3. Spoon the filling onto the tortilla, roll up and enjoy!
