A reliable, sturdy carrot cake full of whole grains, fruit and nutrition. Infinitely adaptable for holidays and/or whatever is available in the pantry.

Ingredients

cup butter |
| 2 1/2 |
cups raw sugar |
| 2 |
eggs |
| 2 1/4 |
cups unsweetened applesauce |
| 3/4 |
cup shredded carrots |
| 4 1/2 |
cups whole wheat flour |
| 3 |
tsp. baking soda |
| 1/2 |
tsp. salt |
| 1 1/2 |
tsp. cinnamon |
| 1 1/2 |
tsp. grated nutmeg |
| 1 1/2 |
tsp. allspice |
| 1 1/2 |
tsp. ginger |
| 1 1/2 |
cups almonds |
| 1 1/2 |
cups golden raisins |
Directions
- Mix everything in the order given.
- Turn into a greased & floured tube or bundt pan
- bake at 350 degrees for 1 hr. 30 min.
- Optional: Glaze with lemon or orange glaze: 1 cup powdered sugar & 1/4 c. juice or Pierce with fork & soak with syrup: 1 cup raw sugar & 1 cup apple or orange juice
