Escarole Sandwich Recipe

Submitted by ibaka

Makes 4 servings

A simply fantastic sandwich that goes well with sparkling wine (or soda) and grapes. Note that we use french bread loaves, not sliced bread, but the system couldn't recognize them.

Ingredients
4 french bread slices
1 tomato, sliced
1 medium onions, sliced
4 cups of escarole, chopped
4 anchovies
4 mozzarella slices
8 olives
Directions
  1. Open the bread with your hands in the top opening

  2. Fill with the sliced onions and tomatoes

  3. Fill with the olives and chopped escarole

  4. Put an anchovy on the top, and cover it with the cheese slice

  5. Put some salt on the top, if you like, and bake for 5 or 10 minutes.
