Raven & Rayne's Frijoles Borachos Recipe

Makes 8 servings


Mexican drunken bean soup.

Ingredients
1 tbsp olive oil
270 grams onion, sliced (about 1 medium)
150 grams poblano pepper, sliced (about 1 medium)
60 grams jalapeno, diced (about 3 whole raw peppers)
50 grams turkey bacon (about 2 slices)
1 cup water
40 grams cilantro, chopped
2 cups beer, heineken lager
14 1/2 ounces canned tomato, diced
60 ounces pinto beans, canned with liquid
1 tsp kosher salt
1 tbsp garlic powder
1 tsp black pepper
1 tbsp cumin
1/4 tsp paprika
30 grams lime juice
1/4 tsp louisiana hot sauce
Directions
  1. Fry onion, poblano pepper, jalapeno and bacon in the olive oil until tender.

  2. Add 1 cup water, 2 cups beer, tomato and cilantro.

  3. Simmer for about 5 minutes.

  4. Add beans and spices.

  5. Bring to a boil and let simmer for about 10 minutes.

  6. Optional: Serve with rice or corn tortillas.
