Easy to make creamy parmesan risotto. Takes about 30 min. total to make.

Ingredients
| 1/4 |
cup risotto rice, dry |
| 1/2 |
cup red onion, diced |
| 2 |
tbsp. light margarine |
| 1 |
tbsp. extra virgin olive oil |
| 3 |
cups chicken broth, low sodium |
| 1/2 |
cup parmesan cheese, shredded |
Directions
- Saute red onion and margarine on medium heat.
- Add olive oil and rice. Combine.
- Next add 1 cup of low sodium chicken broth. Stir until absorbed. Add additional cups 1 at a time in same manner.
- After mixture begins to thicken and set, remove from heat.
- Add shredded parmesan to still warm mixture.
