Creamy Parmesan Risotto

Makes 4 servings

Easy to make creamy parmesan risotto. Takes about 30 min. total to make.

Ingredients
1/4 cup risotto rice, dry
1/2 cup red onion, diced
2 tbsp. light margarine
1 tbsp. extra virgin olive oil
3 cups chicken broth, low sodium
1/2 cup parmesan cheese, shredded
Directions
  1. Saute red onion and margarine on medium heat.

  2. Add olive oil and rice. Combine.

  3. Next add 1 cup of low sodium chicken broth. Stir until absorbed. Add additional cups 1 at a time in same manner.

  4. After mixture begins to thicken and set, remove from heat.

  5. Add shredded parmesan to still warm mixture.
