Raven's Delicious Spicy Barbacoa Tacos

Makes 18 servings

Spicy shredded beef tacos.

Ingredients
3 lbs. beef brisket
32 oz chicken broth
15 oz tomatoes (diced with the juice)
6 teaspoons lime juice (key lime is best)
1 1/2 tablespoons cumin
1 tablespoon oregano
6 tablespoons jalapeno (diced)
1 medium onion cut into 1" triangular pieces
1/4 cup cilantro (chopped)
3 garlic cloves (finely chopped)
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
Directions
  1. Trim most of the fat from the brisket.

  2. Mix all ingredients together in a bowl.

  3. Render trimmed fat in cast iron dutch oven.

  4. Sear marinated meat in dutch oven.

  5. Add marinade.

  6. Cover.

  7. Transfer to 450ºF oven and bake until tender.

  8. Shred meat with fork and mix with remaining cooking liquid.

  9. Serve with sour cream (or greek yoghurt), cheddar cheese and tortillas.
