| 4 1/2 | cups all purpose flour |
| 2 1/2 | cups sugar |
| 2 | tbsp cinnamon |
| 1 | tbsp baking soda |
| 1 | tsp baking soda |
| 1 | tsp salt |
| 6 | eggs |
| 1 1/2 | cup applesauce |
| 1 | cup vegetable oil |
| 2 | tsp vanilla extract |
| 4 | cups carrots, grated |
| 2 | tart apples, medium peeled and grated |
| 16 | ounce pineapple, crushed drained |
| 1 | cup coconut, flaked |
| 1 | cup raisins |
| 1 | cup walnuts, chopped |
- Combine first five ingrediants
- In another bowl combine eggs, applesauce, oil and vanilla. Stir into dry ingrediants. Stir in carrots, apple,
- pineapple, coconut, raisins, and nuts.
- Fill paper lined muffin cups two-thirds full. Bake at 350 for 20-24 mins. Cool for 5 mins and remove from pan.
