Turkey-Spinach Meatloaf

Makes 8 servings

This juicy, protein-rich meatloaf contains iron and folate, as well as calcium from the milk and cheese. Oats contributes moisture and fiber.

Ingredients
2 large egg whites
3/4 cup skim milk, non fat
3/4 cup oats
10 ounces spinach, frozen, thawed
1 1/2 pound ground turkey, lean
1 small yellow onion
2 cloves garlic
1 1/2 tsp italian seasoning
6 ounces mozzarella, low moisture, part skim milk
Directions
  1. preheat oven to 350 coat loaf pan w\nonstick spray

  2. wisk together egg whites & quick oats

  3. Squeeze water out of spinach

  4. combine turkey, spinach, onion, garlic, and 1 1/4 tsp italian seasoning

  5. add oat mixture, cheese, a generous pinch of salt and pepper, mix well

  6. transfer to loaf pan slightly mounding the center, sprinkle 1/4 tsp italian seasoning

  7. bake uncovered 60 minutes let stand 5 cut into 8 slices
