This juicy, protein-rich meatloaf contains iron and folate, as well as calcium from the milk and cheese. Oats contributes moisture and fiber.

Ingredients
| 2 |
large egg whites |
| 3/4 |
cup skim milk, non fat |
| 3/4 |
cup oats |
| 10 |
ounces spinach, frozen, thawed |
| 1 1/2 |
pound ground turkey, lean |
| 1 |
small yellow onion |
| 2 |
cloves garlic |
| 1 1/2 |
tsp italian seasoning |
| 6 |
ounces mozzarella, low moisture, part skim milk |
Directions
- preheat oven to 350 coat loaf pan w\nonstick spray
- wisk together egg whites & quick oats
- Squeeze water out of spinach
- combine turkey, spinach, onion, garlic, and 1 1/4 tsp italian seasoning
- add oat mixture, cheese, a generous pinch of salt and pepper, mix well
- transfer to loaf pan slightly mounding the center, sprinkle 1/4 tsp italian seasoning
- bake uncovered 60 minutes let stand 5 cut into 8 slices
