Another recipe I found online
| 4 | large tomatoes |
| 4 | oz goat cheese |
| 1 | tbsp roasted red peppers |
| 2 | tbsp extra virgin olive oil |
| 2 | tbsp bread crumbs |
| 1 | tbsp fresh basil |
- Preheat Broiler
- Slice off tops of tomatoes and hollow out seeds
- Mix cheese and peppers (chopped)
- Spoon into tomatoes
- Top with bread crumbs and basil
- Drizzle with EVOO
- Salt and pepper to taste
- Broil 5-10 minutes until top is golden brown
