Goat Cheese Stuffed Tomatoes Recipe

Ingredients
4 large tomatoes
4 oz goat cheese
1 tbsp roasted red peppers
2 tbsp extra virgin olive oil
2 tbsp bread crumbs
1 tbsp fresh basil
Directions
  1. Preheat Broiler

  2. Slice off tops of tomatoes and hollow out seeds

  3. Mix cheese and peppers (chopped)

  4. Spoon into tomatoes

  5. Top with bread crumbs and basil

  6. Drizzle with EVOO

  7. Salt and pepper to taste

  8. Broil 5-10 minutes until top is golden brown
