Tofu 'Cheesecake' Recipe

Cheesecake with no cheese whatsoever! :: It was going to be vegan, but I didn't have any cereal or oatmeal to make the crust so I used egg, white flour and margarine to make a sort of pastry crust (how sinful). The filling is composed of bananas, silken tofu and a few drops of vanilla essence. :) Yum. (Though the price of bananas is SHOCKING at this time of year!) :: This is just the recipe that I used, so it is by no means a professional sort of thing that will help guide you through anything in particular. It may seem unorthodox at times - I didn't have a springform pan (or whatever those things you're supposed to use to bake cheesecakes in), so I made do with what I had. Just put up with me. :)

Ingredients
1 egg
1 1/4 cups white flour
1/3 cup white sugar
1/3 cup margarine
2 medium bananas
500 grams silken tofu
1/2 tbsp vanilla extract, imitation
Directions
  1. Pre-heat the oven to 250 degrees.

  2. Mix the egg, white flour and white sugar.

  3. Line a round 22cm tin with foil.

  4. Spread the dough on the bottom and about 3cm up the side of the tin.

  5. Bake for 5 minutes before taking it out and allowing it to cool.

  6. While it is baking, you can use a blender or food processor to mix together the bananas, silken tofu and vanilla essence (and a bit of extra sugar, about 3 teaspoons, if you've a sweet tooth like me).

  7. Pour the smooth mixture over the base and even it out (or shape it how you like because it doesn't seem to flatten out even when you've got it in the oven for ages).

  8. Return the pan to the oven for 45 minutes, or until the top is firm.

  9. Cool before removing the cheesecake from the pan.

  10. Voila! Serves about 8, or 4 hungry (or 1: hahahahaha!).
