| 15 | oz Pumpkin |
| 1/2 | cup Margarine |
| 1/2 | cup brown sugar |
| 3/4 | teaspoon baking soda |
| 1/2 | teaspoon salt |
| 1/2 | teaspoon cinnamon |
| 1/4 | teaspoon nutmeg |
| 1/4 | teaspoon ginger |
| 1 | teaspoon vanilla extract |
| 1/4 | cup honey |
| 2 | large eggs |
| 2 | cups whole wheat flour |
| 1/4 | cup ground flaxseed |
| 1/3 | cup dried cranberries |
- Preheat oven to 350.
- Lightly grease 9 x 5 - inch loaf pan.
- Beat together margarine, sugar, baking soda, salt, spices, and vanilla in a medium bowl until smooth.
- Add pumpkin, honey, and eggs, beating until smooth.
- Add flour, ground flax and dried cranberries, stirring until smooth.
- Spoon the batter into the prepared pan and let rest at room temperature for 10 minuets.
- Bake the bread for 50 minuets.
- Lay a piece of foil gently across the top. and bake until a cake tester inserted into the center comes out clean, 10 to 15 minuets more.
- Remove the bread from the oven, and allow it to cool for 10 or 15 minuets before turnig it out of the pan onto a rack to cool completely.
