Pumpkin Bread Recipe

Serve warm or toasted plain or with some light cream cheese for a seemingly decadent treat!

Ingredients
15 oz Pumpkin
1/2 cup Margarine
1/2 cup brown sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1 teaspoon vanilla extract
1/4 cup honey
2 large eggs
2 cups whole wheat flour
1/4 cup ground flaxseed
1/3 cup dried cranberries
Directions
  1. Preheat oven to 350.

  2. Lightly grease 9 x 5 - inch loaf pan.

  3. Beat together margarine, sugar, baking soda, salt, spices, and vanilla in a medium bowl until smooth.

  4. Add pumpkin, honey, and eggs, beating until smooth.

  5. Add flour, ground flax and dried cranberries, stirring until smooth.

  6. Spoon the batter into the prepared pan and let rest at room temperature for 10 minuets.

  7. Bake the bread for 50 minuets.

  8. Lay a piece of foil gently across the top. and bake until a cake tester inserted into the center comes out clean, 10 to 15 minuets more.

  9. Remove the bread from the oven, and allow it to cool for 10 or 15 minuets before turnig it out of the pan onto a rack to cool completely.
