These brownies are amazing, I have the tiniest bit, which is the serving size I've put here, but other people, like my bf for example, eat a lot more. Worth it for special occasions!
| 400 | g dark chocolate (at least 55 per cent cocoa solids) |
| 325 | g unsalted butter |
| 6 | whole eggs |
| 2 | egg yolks |
| 300 | g caster sugar |
| 50 | g cocoa powder |
| 80 | g plain flour |
| 150 | g almonds |
| 100 | g milk chocolate |
- Heat oven to 180 (fan)
- Melt chocolate & butter in a heat proof bowl over boiling water until smooth, then leave to cool while doing the next part.
- Whisk eggs, egg yolks and sugar together until pale.
- Fold chocolate mix into eggs.
- Sieve cocoa powder with plain flour then fold everything together.
- Gently mix in the almonds (crushed) and milk chocolate (broken up into small pieces).
- Pour into 20cm square baking tin and bake for 20-30 minutes.
- Leave to completely cool in the tin and then place in the fridge to give the cake a chance to stick together. If taken straight out of the pan it may be slightly too gooey inside.
