| 4 | cups yams |
| 1/2 | cup sugar |
| 4 | egg whites or 1⁄2 cup liquid egg substitute |
| 1/2 | teaspoon salt |
| 1 | teaspoon vanilla extract |
| 1/2 | cup brown sugar or brown sugar substitute |
| 1/4 | cup chopped pecans |
| 1/4 | cup all-purpose flour |
| 2 | tablespoons light margarine |
- 1. Preheat the oven to 350°F. Lightly grease (or spray with cooking spray) a shallow 2-quart baking dish.
- 2. Combine the sweet potatoes, sweetener, egg whites, salt, and vanilla in a food processor or blender and process until smooth. Spoon into the baking dish.
- 3. Stir together the brown sugar, pecans, flour, and margarine in a medium bowl. Lightly sprinkle over the sweet potato mixture. Spray the top with butter-flavored spray and bake until lightly browned, about 30 minutes.
