Real Southern Cornbread - Lillian B. Dye (Wwii Nurse At 12/7 /41) Recipe

Real Southern Cornbread by Lillian B. Dye, Wife of Naval Captain Dye at Pearl Harbor, 1941. Almost all corn meal. 4th ingredient is corn meal, 1 cup.

Ingredients
1 egg
1 cup milk
1/8 lb butter
0.88 cup flour (1 cup yellow corn meal)
1/4 tsp salt
1/8 tsp salt (1/4 rounded tsp salt)
1/3 cup sugar
1/6 cup sugar (1/3 rounded cup sugar)
2 tsp baking powder
2 tbsp flour (regular flour)
Directions
  1. Heat oven to 450 degrees

  2. Use only heavy iron skillet, pre-heated

  3. Beat the egg. After you have melted the butter and mixed other ingredients, add a little more butter and butter the sides of the skillet well.

  4. Now put the the skillet in hot oven for 3 - 5 minutes until batter is completely mixed and ready to go.

  5. Remove hot skillet and immediately pour in batter and return to oven.

  6. Cook about 20 minutes. (Bottom usually dark brown, top golden.)

  7. Remove from oven and invert onto serving plate.

  8. Butter the bottom side (brown side) with lots of butter (1/2 cup!) - not included in calories.
