great stuffing without bird

Ingredients
| 5 |
cups bread, tear into smaller pieces use about 1 loaf of bread, can incorporate croutons/stuffing pieces also |

eggs |

cups mushrooms, pieces, fresh |
| 1 |
cup celery, chopped |
| 1 |
cup onion, choppped |
| 1 |
cup water |
| 3 |
tbs Chicken Bouillon, dry and optional poultry seasoning to taste |

tbs vegetable oil |
Directions
- in larger frying pan, fry onions for about 3-5 minutes
- add celery, continue frying for 3 more minutes
- add mushrooms, continue with medium heat for 3 more minutes
- add water and chicken bouillon and poultry seasoning if desired, add more water if need to just cover contents in pan, and let simmer for 5 minutes, make sure water does not get very low (will need moisture for mixing)
- meanwhile, put bread in very large mixing bowl and in separate smaller bowl, beat four eggs until well mixed
- add pan mixture to bread pieces and mix well so slightly moist, add more water if still totally dry
- add eggs to bowl and mix well
- oil sides and bottom of crockpot well
- put dressing/stuffing into crockpot on low for 5-8 hours, check at 5, 6, 7 hour to make sure sides are not burnt
