Corn Pasta with Black Beans Salad Recipe

Make sure not to overcook the corn pasta or else it becomes too soft to mix in a salad. By Polly Pitchford, Full Spectrum Health™. pasta, black beans, tomato, extra virgin olive oil, lime juice, garlic, cumin, scallions cvt

Ingredients
2 cups corn (shell) pasta (20091)
1/2 cup cooked black beans (16015)
1 tomato, seeded and chopped
1/4 cup extra virgin olive oil
1/4 cup lime juice
1 clove garlic, minced
1/4 teaspoon cumin
1/4 cup scallions, white part only, chopped
Directions
  1. Cook pasta according to package directions. Drain, rinse and cool. Add beans and tomato to pasta.

  2. Mix dressing ingredients in a blender. Pour over pasta and mix well. Serve at room temperature.
