| 2 | cups corn (shell) pasta (20091) |
| 1/2 | cup cooked black beans (16015) |
| 1 | tomato, seeded and chopped |
| 1/4 | cup extra virgin olive oil |
| 1/4 | cup lime juice |
| 1 | clove garlic, minced |
| 1/4 | teaspoon cumin |
| 1/4 | cup scallions, white part only, chopped |
- Cook pasta according to package directions. Drain, rinse and cool. Add beans and tomato to pasta.
- Mix dressing ingredients in a blender. Pour over pasta and mix well. Serve at room temperature.
