Matza Ball Soup Recipe

Makes 16 servings


just like mom used to make but no meat, great for Vegetarians

Ingredients
16 cups water
1/4 cup chicken soup mix
3 Carrots, peeled
3 stalks Celery
1 onion
1 turnip
1/2 cup fresh dill
1/2 cup fresh parsley
2 teaspoons salt
1/4 cup oil
1/4 c club soda
4 large Eggs, slightly beaten
116 grams Matzo Meal (1 Cup)
1/2 t baking powder
Directions
  1. Mix oil, eggs, matzo meal and baking powder in small bowl. Refrigerate in covered bowl 1 hour.

  2. While matza balls are in the refrigerator place vegetables and water in pot. let cook 1 hour

  3. Form mixture into 1 inch balls and boil in "chicken" stock for 30- 40 minutes.
