Sloppy Joes

Makes 6 servings

Can substitute ground chicken or turkey for beef. Or go vegetarian by using ground meat substitute instead. Can eat it like chili - reduce cooking time by 15 min. to get right consistency. Add 2 tsp Worchestershire sauce and 1/2 chopped jalepeno pepper if you like it hot.

Ingredients
1 pound ground beef, extra lean
1 onion, chopped
4 garlic cloves, minced
1 green bell pepper, chopped
2 tbsp chili powder
2 cups kidney beans, cooked, drained, rinsed
3 cups diced tomatoes, canned
1/4 cup oats, large flake
Directions
  1. Cook beef in large deep skillet or Dutch oven over medium heat about 8 minutes. Add onion, garlic, green (and jalepeno if using) peppers and cook 5 minutes. Add tomatoes, beans, oats, chili powder (and Worchestershire sauce, if using). Bring to boil. Reduce heat and simmer for about 25 minutes, stirring occasionally or until thickened.

  2. Scoop sloppy joe mixture into pita halves and top with lettuce and tomato.
