Oatmeal Raisin Walnut Cookie (Family Recipe) Recipe

Makes 40 servings


Delicious, though slightly high in calories, all natural cookies my boyfriend's mother makes. I made them this morning!

Ingredients
1 cup raisins
1 cup butter
1 cup brown sugar
2 eggs
1 tsp vanilla
2 cups flour
1 1/2 cup rolled oats
1/4 tsp salt
1 cup chopped walnuts
1/2 tsp baking soda
1/2 tsp nutmeg
1 tsp ground clove
1 1/2 tsp cinnamon
Directions
  1. Preheat oven.

  2. Pour 1/2 cup boiling water over raisins in bowl, place a plate on top.

  3. Melt butter.

  4. Put sugar in mixing bowl.

  5. Put flour in another bowl w/ the oats, baking soda, salt and all the spices. Whisk them together.

  6. Chop nuts (or, roll them with a rolling pin in a ziploc bag. Easier!)

  7. Mix sugar and melted butter until just slightly grainy.

  8. Mix in one egg to the sugar/butter mix, mix until fluffy. Repeat with other egg.

  9. Drain raisins, except one tablespoon of the raisin water. Add this to the mixing bowl with the sugar/butter/egg along with the vanilla. Mix well.

  10. Add flour/oats/etc,. into the mixing bowl and mix well.

  11. Add raisins and nuts last, mix until even throughout.

  12. Use tablespoon to spoon out drops of dough onto ungreased cookie sheet.

  13. Put into preheated oven for 10-15 mins.

  14. Done when light tan color, and firm but with give, to the touch.

  15. Take out, let cool on cooling rack.

  16. Repeat to heart's delight!
