Fergie's Squash Casserole

Makes 6 servings

Great recipes for children who don't eat vegetables especially if you add extra cheese to it.

Ingredients
6 squash
1 cup of milk
1 cup of cheese
1/2 cup of onion
1 egg
1 cup of crackers
1 tbsp. of melted butter
1 salt
1 pepper
Directions
  1. Slice or chop onion and then cook on stove top on medium heat until it's translucent. While onion is cooking, slice squash into 1/4 inch slices. Place cooked onion mixing bowl. Place sqush in same pan as onion with 1/4 cup of water and cook on medium heat until squash is tender. As squash is cooking, mix the milk, egg, salt and pepper to taste, and cheese with the bowl of onion. Then add squash to it. Pour in casserole dish. Crush crackers and mix with butter. Spread of top of casserole dish and bake on 350 for 30 minutes or until mixture has set. Then turn oven on broil on low-medium temperature so that casserole can brown. If you like cheese, you may add more.
