stuffed squash #2

Makes 4 servings

stuffed squash

Ingredients
3 cups butternut squash
4 oz mushrooms
1 clove garlic
1 tspn oil
Directions
  1. bake squash

  2. scoop out insides, save "shell"

  3. chop up with garlic and mushrooms

  4. add 2 chopped up vegan grillers (130 calories each, not included in calorie count cause they wouldn't let me add them!)

  5. sautee with minimal amount of olive oil

  6. season to taste

  7. stuff the mixture back into the shell

  8. bake at low temp

  9. also good with cheese on top.
