Pumpkin Cookies

Makes 53 servings

Pumpkin, Oatmea, Raisin cookies

Ingredients
2 c. all-purpose flour
1 1/3 c. quick oats
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
1/2 c. butter
1 c. Light Brown Sugar
1 c. granulated sugar
1 c. pumpkin
1 egg
1 tsp. vanilla extract
3/4 c. raisins
Directions
  1. Combine Flour, Oats, Baking Soda, Cinnamon and Salt in Medium bowl.

  2. Beat Butter, Brown Sugar and Granulated Sugar in Large Mixer Bowl until Light and Fluffy.

  3. Add Pumpkin, Egg and Vanilla Extract; Mix Well.

  4. Add Flour Mixture; Mix Well.

  5. Stir in Raisins.

  6. Drop spoonfuls of dough onto Greased baking sheets.

  7. Bake for 14 - 16 minutes at 350 degrees F.
