Makes about 20 Sates
| 1/3 | cup LemonGrass, finely chopped |
| 3 | cloves Garlic, coarsely chopped |
| 2 | Jalapeno peppers, seeded and chopped |
| 1/4 | cup fresh cilantro |
| 3 | tablespoons Brown Sugar |
| 2 | teaspoons Ground Coriander |
| 1/3 | cup Fish Sauce |
| 1/4 | cup Lime Juice |
| 4 | tablespoons vegetable oil |
| 1 1/2 | pounds Flank Steak |
- Prepare the marinade: Combine the lemongrass, garlic, chiles, cilantro, and brown sugar in the food processor to a coarse paste. Work in the coriander, fish sauce, lime juice, and 2 tablespoons of oil.
- Slice the flank steak into thin strips and marinate for 30 minutes. Thread strips on bamboo skewers.
- Grill over high heat and baste with the remaining oil until cooked, 1 to 2 minutes per side.
