| 6 | medium red potatoes, peeled, cubed, and boiled |
| 1 | small onion, diced |
| 4 | ounces cream cheese, softened |
| 1/2 | cup sour cream |
| 1/2 | cup grated cheddar cheese |
| 2 | teaspoons salt |
| 1/4 | teaspoon garlic salt |
| 3 | tablespoons butter, cut into small pieces |
| 1/4 | teaspoons parsley |
| 1/4 | teaspoons paprika |
- Beat together all ingredients except for butter, parsley, and paprika and spoon into a greased 9" x 9" x 2" casserole dish.
- Dot top with butter.
- Sprinkle parsley and paprika over top.
- Refridgerate for at least 1 hour.
- Bake in a 400 degree over for 35 minutes.
