Latkes Recipe

Makes 1 serving


Potato Pancakes, wonderful with fat-free yogurt and homemade apple sauce.

Ingredients
2 medium potatoes
1/4 onion
1 egg
1 1/2 tablespoon flour
Directions
  1. Grate the potatoes and onion.

  2. Mix in egg and flour. Batter should stick together without being lumpy or soupy.

  3. Salt and pepper to taste.

  4. Heat a skillet or griddle until a drop of water bounces across the surface.

  5. Spray with non-stick.

  6. Drop large spoonfuls of batter on griddle.

  7. Cook until the edges firm up.

  8. Turn and cook until done.
