vegetarian pie. This is rather imprecise in the timings as I go with gut feelings when making it.
| 200 | g quorn mince |
| 260 | g sweet potatoes |
| 1 | tbsp red wine vinegar |
| 2 | tsp spices |
| 400 | g tomatoes, chopped |
| 2 | tsp garlic, crushed |
| 2 | tsp tomato paste |
| 1 | oz cheddar cheese |
| 2 | tbsp olive oil |
| 1/2 | oz unsalted butter |
| 1 | tbsp semi-skimmed milk |
- peel, chop and boil sweet potatoes
- whilst they are boiling, heat the oil
- fry the quorn mince for five minutes
- add the red wine vinegar and cook for another 3 or so minutes
- add the garlic and tomato pastes and cook for another couple of minutes
- add the spice mix (either fajita mix or garam masala) and cook for a couple of minutes
- add the tomatoes, stir well and simmer for 10-15 minutes till it starts to reduce
- whilst the filling is reducing, drain the sweet potatoes and mash with the butter and milk
- put the filling into a loaf tin
- cover with the mash
- sprinkle with the cheese
- bake at 200C for 20minutes
