basic pasta - I like it with taglietelle
| 75 | g pasta |
| 1 | eggplant, grilled |
| 1/2 | oz pine nuts |
| 1 1/2 | oz goat's cheese |
| 1 | tbsp olive oil |
- boil water in large saucepan and add pasta - simmer whilst preparing sauce
- heat a griddle and toast pine nuts - set aside
- slice aubergine lengthways and brush with olive oil
- put aubergine slices on griddle and cook till soft
- chop up goats cheese
- drain pasta and stir in goats cheese and pine nuts
- server pasta, with aubergine slices on top
