Almond Butter Cookies Recipe

Makes 25 servings


Crispy salty-sweet almond cookies that go great with tea.

Ingredients
1/4 cup canola oil
1 cup almond butter
1/4 cup maple syrup
1/2 tsp vanilla extract
1 cup whole wheat flour
1/4 tsp salt
Directions
  1. Put almond butter and oil in bowl

  2. Microwave for 30 seconds until warm

  3. blend together until smooth

  4. Mix in maple syrup and vanilla extract

  5. Sift flour and salt together into almond butter mixture

  6. Stir until just combined

  7. Cover and refrigerate for 10 minutes

  8. Preheat over to 300. Lightly grease a baking sheet/use a silpat/use a nonstick pan

  9. Roll dough int 3/4 inch balls and flatten on baking sheet with fork.

  10. Bake 18 minutes, until bottoms are lightly browned.

  11. Cool on baking sheet a couple of minutes, then transfer to a cooling rack.

  12. Note: may be made with other nut butters
