Crispy salty-sweet almond cookies that go great with tea.
| 1/4 | cup canola oil |
| 1 | cup almond butter |
| 1/4 | cup maple syrup |
| 1/2 | tsp vanilla extract |
| 1 | cup whole wheat flour |
| 1/4 | tsp salt |
- Put almond butter and oil in bowl
- Microwave for 30 seconds until warm
- blend together until smooth
- Mix in maple syrup and vanilla extract
- Sift flour and salt together into almond butter mixture
- Stir until just combined
- Cover and refrigerate for 10 minutes
- Preheat over to 300. Lightly grease a baking sheet/use a silpat/use a nonstick pan
- Roll dough int 3/4 inch balls and flatten on baking sheet with fork.
- Bake 18 minutes, until bottoms are lightly browned.
- Cool on baking sheet a couple of minutes, then transfer to a cooling rack.
- Note: may be made with other nut butters
