Very flavoursome
| 2 | cups chopped onions |
| 2 | tbs peanut oil |
| 1/2 | tsp chili powder |
| 1 | tsp garlic |
| 2 | cups cabbage |
| 3 | cups chopped yam |
| 3 | cups tomato juice |
| 3 | cups tomato juice |
| 1 | cup apple juice |
| 1 | pinch salt |
| 1 | tsp fresh ginger |
| 1 | tbs cilantro |
| 2 | cups chopped green beans |
| 1/2 | cup peanut butter |
- Saute onions in oil for about 10 minutes.
- Stir in chili and garlic - saute a couple more minutes.
- Add cabbage and yams (I generally use sweet potato, but the calorie counter wouldn't recognise it).
- mix in juices (I generally use apricot juice instead of apple, but the calorie counter wouldn't recognise it), salt, ginger, cilantro and tomatoes.
- Cover and simmer for 15 minutes, until yams (or sweet potatoes) are tender.
- Add green beans and simmer another 5 minutes.
- Stir in peanut butter.
- Simmer gently until ready to serve.
