Groundnut Stew Recipe

Makes 6 servings


Very flavoursome

Ingredients
2 cups chopped onions
2 tbs peanut oil
1/2 tsp chili powder
1 tsp garlic
2 cups cabbage
3 cups chopped yam
3 cups tomato juice
3 cups tomato juice
1 cup apple juice
1 pinch salt
1 tsp fresh ginger
1 tbs cilantro
2 cups chopped green beans
1/2 cup peanut butter
Directions
  1. Saute onions in oil for about 10 minutes.

  2. Stir in chili and garlic - saute a couple more minutes.

  3. Add cabbage and yams (I generally use sweet potato, but the calorie counter wouldn't recognise it).

  4. mix in juices (I generally use apricot juice instead of apple, but the calorie counter wouldn't recognise it), salt, ginger, cilantro and tomatoes.

  5. Cover and simmer for 15 minutes, until yams (or sweet potatoes) are tender.

  6. Add green beans and simmer another 5 minutes.

  7. Stir in peanut butter.

  8. Simmer gently until ready to serve.
