spaghetti good for light meal or as a side dish
| 12 | oz whole wheat spaghetti |
| 4 | slices turkey bacon |
| 4 | cloves garlic |
| 4 | cups fresh spinach |
| 2 | cups chicken stock |
| 1/2 | cup shredded lowfat mozzarella cheese |
- Prepare pasta and set aside.
- Brown bacon (cut into 1/2" pieces).
- Add garlic to drippings & brown.
- Add spinach (or kale), salt & pepper, and cook until wilted.
- Add chicken stock (14 oz plus water to make 2 c) and simmer covered for 10 min.
- Add to drained pasta with mozzarella.
- Serve with pacon pieces on top.
