Muffins-Orange Wheat Recipe

Makes 12 servings


These are great for breakfast and can be put together with only one eye open while the coffee is brewing.

Ingredients
2 cups whole wheat flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tbls flax seed, 6 tbls water
1/4 cup canola oil
12 oz orange juice
1 cup cranberries
2 oz hazelnuts
Directions
  1. In a large bowl, combine the flour, baking powder, baking soda, and salt.

  2. In a small bowl, combine the 1 egg(I use the ground flax seed and water, instead of the egg) oil, and orange juice, and add them to the flour mixture, stirring the mixture until the flour is just moistened.

  3. Mix in the cranberries and nuts, divide the batter among 12 greased muffin cups. Bake the muffins at 400 degrees for about 20 minutes
