Grilled Steak with Salsa Sauce and Steamed Broccoli Recipe

Steak and Salsa

Ingredients
4 tablespoons salsa, jarred or fresh
1 1/2 tablespoons fat-free sour cream
5 oz beef, tenderloin
1 teaspoon extra virgin olive oil
1 cup chopped frozen broccoli
1/4 pound mixed salad greens
1/2 medium tomato
5 baby carrots, fresh
1/2 cucumber
2 tablespoons salad dressing, favorite flavor, fat-free
Directions
  1. Mix together salsa and sour cream; refrigerate until ready to serve.

  2. Trim any fat from the steak. Light a grill and brush the grill rack with olive oil.

  3. Grill the steak 4 to 5 minutes each side, turning once, for medium-rare, or longer to desired doneness.

  4. Transfer the steak to a cutting board and let rest for 5 minutes; slice on the diagonal into 1/2-inch thick slices.

  5. To serve, spoon the salsa mixture onto a plate and place the steak slices, slightly overlapping, on top.

  6. While steak is cooking, prepare steamed broccoli and mixed salad.

  7. Steam broccoli in microwave or on stovetop until crisp-tender.

  8. Prepare salad by washing lettuce greens (1/4 pound is approximately 2 cups), tomato, carrots and cucumber; chop tomato and carrots; peel and slice cucumber. Toss together and drizzle with dressing and vinegar, if desired
