A low fat delicious lemony dessert
| 4 | oz couscous |
| 2 | eggs |
| 8 | oz nonfat cottage cheese |
| 200 | g lemon |
| 8 | g splenda |
| 1 | teaspoon baking powder |
- Remove zest from 2 lemons and squeeze juice.
- Add Splenda or Canderal (2 tablespoons.
- Pour boiling water over plain couscous to cover, stir and leave until water is absorbed.
- Puree/process cottage cheese until smooth, or use Quark. Beat in to lemon zest andjuice.
- Add in baking powder.
- Mix into couscous.
- Beat 2 eggs separately, mix into couscous mixture.
- Place in glass flan dish and smooth.
- Microwave on full power for 10-12 minutes, until risen and set.
- Eat hot or cold.
