Cucumbers and Onions in vinegar solution is sort of like pickles only fresher. This dish,prepared fresh from the garden was served as a summer addition to many meals in our family.
| 2 | cucumbers, sliced |
| 1/2 | large onion, sliced |
| 1 | cup vinegar |
| 1 | cup water |
| 1/2 | cup sugar |
- Slice cucumbers and onion. Pack in a pint jar.
- Pour solution of vinegar,water and sugar over cukes and onions to cover. Can serve immediately, but best if let set in the refrigerator overnight. Serve as a side dish, or topping for a sandwich. Delicious with a meal of corn-on-the cob, sliced tomatoes, and fried potatoes.
