Cucumbers and Onions Recipe

Cucumbers and Onions in vinegar solution is sort of like pickles only fresher. This dish,prepared fresh from the garden was served as a summer addition to many meals in our family.

Ingredients
2 cucumbers, sliced
1/2 large onion, sliced
1 cup vinegar
1 cup water
1/2 cup sugar
Directions
  1. Slice cucumbers and onion. Pack in a pint jar.

  2. Pour solution of vinegar,water and sugar over cukes and onions to cover. Can serve immediately, but best if let set in the refrigerator overnight. Serve as a side dish, or topping for a sandwich. Delicious with a meal of corn-on-the cob, sliced tomatoes, and fried potatoes.
