Delicious seasonal recipe! Made w one tablespoon batter each they make 36 cookies at 95 calories each without sacrificing taste or quality!
| 2 1/4 | cups (315g) all purpose flour |
| 2 | tsp ground ginger |
| 1 | tsp baking soda |
| 1 | tsp ground cinnamon |
| 1/2 | tsp ground cloves |
| 3/4 | cup butter |
| 1 | cup granulated sugar |
| 1 | egg |
| 1/4 | cup molasses |
| 55 | g cane sugar |
- In a medium bowl combine flour, ginger, baking soda, cinnamon, and cloves. Set aside.
- In an electric mixer with paddle attachment, beat butter (still relatively cold) in electric mixer on medium speed for 30 seconds. Beat in the 1 cup of granulated sugar. Blend well. Add egg and molasses; beating until uniform colour and consistency (you'll need to scrape down the sides of the bowl). Stir flour mixture into egg mixture. Dough will form up like ginger snap dough - fairly dry compared with a chocolate cip cookie dough for instance.
- Using a one tablespoon measure, shape dough into balls. Roll balls into the cane sugar to coat. Place balls about 2 inches apart onto an ungreased cookie sheet.
- Bake in a 350F oven for 10 minutes or until light brown and still puffed. (Do not overbake or they'll be as dense as hockey pucks). Cool on pans for 2 minutes, then transfer to wire rack to cool completely.
