A reduced fat & sugar, easy cake. It looks stunning and tastes great! Wonderful for birthdays or Valentine's Day.

Ingredients

package chocolate cake mix such as Betty Crocker |
| 12 |
ounces diet Coke or Pepsi |
| 1 |
Egg white |
| 150 |
grams lite Cool Whip (about 2/3 container) |
| 30 |
grams Jello sugar free instant pudding (about 2/3 of box) |
| 4 |
ounces fresh raspberries (optional) |
| 2 |
tablespoons miniature semi sweet chocolate chips (optional) |
Directions
- Combine cake mix, diet Coke and egg white in medium bowl.
- Follow directions on box for mixing and baking.
- When cake cools, combine pudding mix and Cool Whip. I combined the entire packages of each, but only needed about 2/3 to frost the cake.
- Frost cake with pudding/Cool Whip mixture. If desired, place raspberries or strawberries on top and sprinkle with mini chocolate chips or chocolate shavings.
