Creole Spinach Balls

Makes 84 servings

So good you wont know they are spinach!

Ingredients
4 packages frozen chopped spinach
10 eggs
1 large onion
1 cup paremsan cheese
4 cups herb stuffing
1 tbsp cayenne pepper
1 tsp creole seasoning
1 tsp garlic salt
Directions
  1. Preheat oven to 450

  2. Mix all ingrediants together.

  3. Form into 1 inch balls, place on cookie sheet.

  4. Cook until slightly crispy (About 10-15 min). Let sit on sheet until fully crispy (out of oven).

  5. Remove and serve.

  6. Recommeded dip: sour cream.

  7. Also makes a good veggie patty. (Make into patties instead of balls) Serve on a bagel w/ cream cheese.

  8. Note: Amounts of cayenne pepper, creole seasoning and garlic salt can be modified based on taste.
