Chinese Fried Rice

Makes 1 serving

Low GI, low fat version of this chinese inspired dish

Ingredients
2 oz brown rice
1 spring onion, chopped
5 oz mushrooms, sliced
1 oz ham, chopped
1 oz prawns
3 oz snow peas
3 oz carrot, diced
2 oz red pepper, diced
1 tsp olive oil
1 tsp soy sauce
Directions
  1. Cook the rice according to the packet instructions and reserve

  2. Heat the olive oil or cooking spray in a non-stick frying pan or wok

  3. Cook the onion, red pepper and mushrooms for a few minutes on a high heat

  4. Add the ham, prawns, snow-peas (sugar snaps), diced carrot and stir-fry for about 3 mins

  5. Add the drained rice, soy sauce, stir through and serve immediately
