Low GI, low fat version of this chinese inspired dish

Ingredients

oz brown rice |
| 1 |
spring onion, chopped |
| 5 |
oz mushrooms, sliced |
| 1 |
oz ham, chopped |
| 1 |
oz prawns |
| 3 |
oz snow peas |
| 3 |
oz carrot, diced |
| 2 |
oz red pepper, diced |
| 1 |
tsp olive oil |
| 1 |
tsp soy sauce |
Directions
- Cook the rice according to the packet instructions and reserve
- Heat the olive oil or cooking spray in a non-stick frying pan or wok
- Cook the onion, red pepper and mushrooms for a few minutes on a high heat
- Add the ham, prawns, snow-peas (sugar snaps), diced carrot and stir-fry for about 3 mins
- Add the drained rice, soy sauce, stir through and serve immediately
