Edamame Salad Recipe

Colorful and packed with nutrients.

Ingredients
10 oz. edamame, shelled
15 oz. corn, canned (or frozen)
10 ripe olives, chopped
1/2 tomato, fresh, seeded and chopped
1 tbsp. light mayonnaise
Directions
  1. Prepare edamame according to package directions.

  2. Combine ingredients and chill.

  3. Sprinkle with paprika or southwestern-style seasoning.
