| 1 | large onion |
| 6 | tbsp olive oil |
| 1 1/4 | cup lentils |
| 1 | tsp salt |
| 3/4 | cup long grain rice |
- bring lentils to boil in quart of water
- put lid on and simmer 15 minutes
- add rice and simmer another 15 minutes
- dice onions
- fry onions in olive oil over medium heat for 12 minutes
- combine onions and lentils wth rice
