cup Onion, chopped |

Garlic Clove, minced |

oz diced Tomatoes (Canned, Italian or Mexican) |

teaspoon Chili Powder |
| 1/4 |
teaspoon Ground Cumin |
| 3/4 |
cup Ricotta Cheese (Part Skim) |
| 1/4 |
cup Mozzarella, Part Skim Milk Cheese (shredded) |

tablespoons Fresh Cilantro, minced & chopped |

Flour Tortillas |

cup Cheddar Cheese (Reduced Fat, Shredded) |
Directions
- In a non-stick pan cook the ground beef and the next 2 ingredients. Drain.
- Stir in tomatoes and next 2 ingredients.
- Bring to a boil and then remove from heat.
- In a bowl combine the ricotta and mozzarella cheese and 2 tablespoons cilantro.
- Place 1 tortilla in a 9" round cake pan coated with cooking spray.
- Layer with 1/2 the meat sauce then 1 tortilla.
- Add all the ricotta mixture on top another tortilla and the remaining meat sauce.
- Top with the last tortilla.
- Sprinkle with the cheese and the remaining cilantro.
- Cover and bake at 400° for 15 minutes.
- SERVING SIZE= 1/6 of Pie
