Rd's Vegetable Lasagna Recipe

Serve with a Rocket Salad

Ingredients

For the lasagne:
2 cloves garlic, chopped
1/2 tbsp olive oil
2 onions, cut into chunks
2 courgettes,
250 g aubergine (1 medium)
1 red pepper
1 yellow peppers
8 oz mushrooms
400 g canned tomatoes, chopped
1 pinch of paprika
1 tsp oregano
1 Salt and black pepper
6 lasagna sheets
125 g cheddar cheese, grated

For the salad:
4 cups rocket
2 tbsp shallots (2 shallots)
4 tomatoes
1 tbsp Balsamic vinegar
Directions
  1. Pre-heat oven to 190°C, Gas Mark 5. Fry onions and vegetables in the olive oil for 10-12 minutes over a high heat, stirring continuously. Add the tomatoes, paprika, oregano, garlic and bring to the boil. Season.

  2. Place alternate layers of vegetables and pasta sheets in an oven proof dish, finishing with a layer of vegetables. Top with cheese and bake for 25-30 minutes, until golden brown.

  3. Wash rocket leaves and place 1 handful in individual side bowls. Chop shallots and tomatoes, place even amounts in each bowl. Dress with balsamic vinegar and a little freshly ground black pepper.
