Serve with a Rocket Salad
For the lasagne: |

| 2 | cloves garlic, chopped |
| 1/2 | tbsp olive oil |
| 2 | onions, cut into chunks |
| 2 | courgettes, |
| 250 | g aubergine (1 medium) |
| 1 | red pepper |
| 1 | yellow peppers |
| 8 | oz mushrooms |
| 400 | g canned tomatoes, chopped |
| 1 | pinch of paprika |
| 1 | tsp oregano |
| 1 | Salt and black pepper |
| 6 | lasagna sheets |
| 125 | g cheddar cheese, grated |
For the salad: |

| 4 | cups rocket |
| 2 | tbsp shallots (2 shallots) |
| 4 | tomatoes |
| 1 | tbsp Balsamic vinegar |
- Pre-heat oven to 190°C, Gas Mark 5. Fry onions and vegetables in the olive oil for 10-12 minutes over a high heat, stirring continuously. Add the tomatoes, paprika, oregano, garlic and bring to the boil. Season.
- Place alternate layers of vegetables and pasta sheets in an oven proof dish, finishing with a layer of vegetables. Top with cheese and bake for 25-30 minutes, until golden brown.
- Wash rocket leaves and place 1 handful in individual side bowls. Chop shallots and tomatoes, place even amounts in each bowl. Dress with balsamic vinegar and a little freshly ground black pepper.
