| 2 | cups Quinoa, cooked and cooled |
| 1 | cup Parsley, chopped |
| 1/2 | cup Scallions, chopped |
| 2 | T fresh Mint, chopped |
| 1 | Garlic Clove, minced or pressed |
| 1 | tbsp fresh Basil, minced |
| 1/2 | cup Lemon Juice |
| 1/4 | cup Extra Virgin Olive Oil |
| 1/4 | tsp Salt |
| 1/8 | tsp White Pepper |
Toss together all ingredients. Chill for one hour or more to allow flavors to blend.Categories
